My Favorite Pumpkin Muffins, gluten free of course

These muffins are low in sugar, made with honey or molasses. Made with honey the taste is very mild. Made with molasses, cloves & chocolate chips, the flavor is stronger & chocolaty delicious.

Pumpkin Muffins

1 c. pumpkin, canned or pureed
1/4 c. apple sauce
1/2 c. garbanzo bean flour
1 1/2 c. brown rice flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp allspice
1/4 tsp nutmeg
1/2 c. honey
2 eggs
1/4 c. oil
dash salt
1/2 c. currants or nuts

Molasses & Chocolate Chip Version

This version is my favorite because I have a thing for cloves and chocolate.

Use molasses instead of honey, add 1/8 tsp of cloves, instead of currants or nuts add 1/2 c. or more, Ghiradelli bittersweet chocolate chips
