We usually have this on Christmas. When I was making it for my friend's shower Michael exclaimed "It's Christmas?", in a confused tone.
Chocolate Zucchini Cake
1 1/4 cups brown rice flour
1 cup garbanzo or white bean flour
2 tsp xantham gum
1/2 cup unsweetened cocoa powder
1 T baking powder
1 1/2 tsp baking soda
1 tsp sea salt
1 tsp Saigon cinnamon (I've never tried Saigon cinn., I just use regular)
3/4 cup soft butter
2 cups sugar
3 eggs
2 tsp gluten free vanilla
2 tsp grated orange peel
2 cups shredded zucchini
1/2 cup milk or non-dairy substitute
Preheat oven to 350 F. Grease and flour tube pan or loaf. Mix first 8 ingredients (flours- cinnamon). Set aside. In another bowl cream together butter & sugar. Add eggs one at a time, vanilla, orange peel and zucchini. Stir in; alternating flour and milk. Bake 1 1/2 hours. (Check often, I seem to remember the cake not taking this long). Shut off oven. Cool with oven door open for 30 minutes.
Chocolate Ganache Frosting
1 bag Ghiradelli bitter sweet chocolate chips
small amount of heavy cream
melt chocolate, with burner off add heavy cream to consistency desired.
Frost immediately. Enjoy.
