How delicious does gluten free look?

We're having the best time cooking out this summer. We haven't had a grill for a few years, so we are loving it!

This is presented in a hurry up and eat style as we were really hungry! I managed to snap a picture before it was devoured. We happened upon the best combo of flavors. Gluten free Cilantro pesto pasta with grilled steak and goat feta cheese . Also grilled zucchini topped with Zergut's , mild Ajvar and feta cheese. All gluten free. Wow! Symphony of flavors! Gluten free Strawberry, orange muffins topped with peach, mango, lime jam.

My mom taught me how to make freezer jam last summer and this was my first, lone attempt. I made a batch of peach jam and then a batch of peach, mango, lime jam. Really, really yummy! Especially the peach/ mango which only came about because I didn't have enough peaches. Hmm, how about mango? I didn't have another lemon. How about lime? Necessity is the mother of invention, but it didn't set very well. Ah, well, I will try this one again for sure!

Gluten Free Strawberry Orange Muffins

Whisk together
1/2 c. garbanzo bean flour
1 1/2 c. brown rice flour or
(2 c. all purpose flour for those not gf)
1-2 tsp xantham gum (leave out if not gf)
1 T baking powder, (yes that is Tablespoon)
1/2 tsp salt

Whisk together in another bowl
2 large eggs
1 c. milk (can make dairy free by using 1 c. almond or soy milk)
2/3 c. sugar or packed light brown sugar
6 T melted unsalted butter or vegetable oil
1 tsp vanilla
zest of 1 orange
1 1/2 c. strawberries, sliced

Add to flour mix & mix together wth a few strokes. Don't overmix
12- 15 minutes at 400F

  1. Gluten free looks yummy to me. I just had a bd party for Magdalena and we had gluten/dairy/soy free cupcakes and coconut ice cream, it was yummy! I'm going to share your link with a couple of my mama friends who are relatively new to the whole gig. You rock, thank you!
